What if the sentiment overwhelmingly favours moving the goal down, but you feel the goal is not entirely pie in the sky?

It is a choice the team needs to make. Do not push too hard or argue with the team. However, you can ask the team to revisit the decision on moving the goalpost down till after they had gone through the next session (adjusting the plan). And ask them to jump into the next session with the intention of achieving the goal. If after the session they still feel it is out of reach, they can decide on how to adjust the goal.
